Ingredients

Hummus

Garbanzo Beans (rinsed)

Garlic (2 cloves)

Tahini (1/3 c)

Extra Virgin Olive Oil

Salt (to taste)

Lemon (2 Tbsp juice, plus zest to taste)

Ice cubes (1-2)

Cold Water (optional, add if hummus is too thick)

Pine Nuts

Neutral Oil (Canola, Vegetable, Avocado, or others)

Meat

Filet Mignon (6 oz, cubed)

Neutral Oil (Canola, Vegetable, Avocado, or others)

Black Pepper (to taste)

Smoked Paprika (to taste)

For Serving

Pomegranate Molasses (to drizzle)

Mint (to garnish)

Pita Bread

Directions

For the hummus:

  1. Blitz garbanzo beans, garlic, tahini, ice cubes, and extra virgin olive oil in a food processor or blender until thick and creamy.
  2. Adjust salt and/or lemon to taste.

For the pine nuts:

  1. Heat a pan on medium heat. Add 1 Tbsp of neutral oil to a pan.
  2. Toast pine nuts for 4-5 minutes or until golden brown. Keep stirring so they don’t burn!

For the meat:

  1. Sear on high heat for 5-6 minutes in 1 Tbsp of neutral oil. Season with salt, pepper, and smoked paprika to taste.
  2. Add pine nuts in the last 2 minutes of cooking.

For serving:

  1. Drizzle with molasses. Garnish with mint.
  2. Tear off a piece of pita and enjoy!
