In this episode, Aliyah is challenging her dad, an award-winning chef, to the family's favorite dish: chile verde. Aliyah is still learning how to perfect her dad's famous stew, but cooking skills are not all she got from Cruz. She inherited his confidence, too!

Ingredients

Serves 4-5 people

Tomatillos (9)

Large Yellow Onion (1, quartered)

Medium Yellow Onion (2, diced)

Avocado Oil

Ac’cent Flavor Enhancer Seasoning

Sea Salt (use grinder)

Black Pepper (use grinder)

Garlic Powder

Russet Potatoes (5)

Pork Loin (1 1/2 lbs, cut in half-inch cubes)

Las Palmas Green Chile Enchilada Sauce (2 cans)

Avocado Oil

Directions

  1. Preheat oven to 400°F (225°C) and put an oven rack on the bottom shelf.
  2. Rinse and unpeel tomatillos into strainer with a plate underneath.
  3. Use cutting board to cut tomatillos in half and remove top root.
    Tip: Put a wet napkin underneath to add sturdiness.
  4. Cut large yellow onion in quarters. Drizzle avocado oil onto sturdy sheet pan. Make sure oil is evenly spread.
  5. Add tomatillos and onions to the oil in the sheet pan. Mix. Season with Ac’cent, Sea Salt, and Garlic Powder.
  6. Put vegetables on bottom shelf of the oven. Cook for 20 minutes.
  7. Clean russet potatoes and poke about 3 holes in each. Drizzle water on potatoes. Cook potatoes in microwave. We recommend an auto-setting if available.
  8. Dice 2 medium onions. Heat a pan to medium-high heat. Add avocado oil. Once oil is hot, add half-inch pork loin cubes to frying pan. Once cooked, add sea salt, black pepper, and garlic powder. Add diced yellow onions to the pan.
  9. Remove the tomatillos from the oven. If they aren’t browned yet, put them under broiler for 3 minutes and check again.
  10. Add tomatillos to cold cast iron pot. Add 1 1/2 cans of Las Palmas Green Chile Enchilada Sauce to tomatillos. Mix with an immersion blender. If you don’t have an immersion blender, use a regular blender or food processor and then add back into cast iron pot.
  11. Cook on stove at medium heat for 30 minutes. Take potatoes out of microwave, peel, cut into half-inch cubes, and add to pot.
