In this episode, Darla is in the kitchen to make her mom's famous Thanksgiving leftover turkey and dumplings. This soup has been a family staple that friends travel far and wide to savor. But will Darla's gluten-free twist be the reason her dumplings sink…or swim?
Ingredients
Serves 6-8 people
Turkey
Bone-in Turkey Thigh (1 lb)
Bone-in Turkey Breast (2 lb)
Butter (1/2 c)
Kosher Salt (1 Tbsp)
Ground Black Pepper (1/2 tsp)
Mrs. Dash Original Seasoning Blend (2 Tbsp)
Olive Oil (2 Tbsp)
Soup
Cooked & Shredded Turkey (3-4 c)
Yellow Onion (1)
Butter (2 Tbsp)
Bay Leaves (2)
Carrots (3)
Celery Ribs (3)
Fresh Thyme (2 Tbsp)
Mrs. Dash Original Seasoning Blend (2 Tbsp)
Russet Potatoes (4)
Cornstarch (1/2 c)
Fresh Parsley
Fresh Garlic (2 Tbsp, diced)
Better than Bouillon Chicken Flavor (8 tsp)
Water (6-8c)
Whole Milk (1 c)
Gluten-Free Dumplings
All Purpose Gluten Free Flour (2 1/4 c)
Eggs (2, beaten)
Gluten Free Chicken Broth (1 c)
Baking Powder (2 tsp)
Fresh Parsley (1 Tbsp)
Directions
For the turkey:
- Preheat oven to 350°F (175°C)
- Melt 1/4 c butter. Keep remaining softened at room temperature.
- Pat turkey dry. Lift skin and stuff with softened butter.
- Place turkey in baking pan. Drizzle with melted buter and rub with Mrs. Dash Original Seasoning Blend, Kosher Salt and Ground Black Pepper.
- Roast the turkey for 45-50 minutes or until turkey reaches 170°F (76°C). Remove from the oven, wait until cool, then shred.
For the soup:
- Prep veggies (wash and dry, peel and slice carrots, peel and slice potatoes into 1/4 cubes, slice celery, chop parsley and thyme)
- Melt butter in large pot big enough to hold 8 c water. Sauté onion until transparent. Add carrots, celery, and garlic. Cook until aromatic. Sprinkle with cornstarch.
- Add water to pot. Simmer on medium for a few minutes. Add Better than Bouillon Chicken Flavor and bay leaves to boiling water. Add milk. Add shredded turkey. Bring everything to a simmer. Leave at a simmer. Remove bay leaves before adding dumplings.
For the dumplings:
- Mix gluten free flour, eggs and baking powder in a bowl. Add beaten eggs, fresh parsley, and chicken broth. Mix well.
- Take even spoonfulls of mixture and drop into simmering soup. Sprinkle Mrs. Dash Original Seasoning Blend on the dumplings.
- Cover soup and continue to simmer for 20 minutes.
- Garnish with fresh parsley and fresh thyme as well as kosher salt and pepper (if needed).
